Heat the olive oil in a large skillet over medium heat. Add the minced garlic and saute for a couple of minutes.
Add ground beef and season with salt, pepper, cayenne pepper, and cumin. Cook until the beef is browned and cooked through.
Add onions and cook for about three minutes. Add the refried beans and mix thoroughly. The mixture will likely be too thick, so you can add a quarter cup of water to make spreading a little easier.
Preheat your oven to 350°F (175°C).
Heat up a saucepan and add enchilada sauce and condensed tomato soup. Depending on how spicy you want your burritos to be, you can add some extra cayenne pepper. Once the sauce starts to bubble, take it off the heat and set aside.
NOTE: if you buy the spicy enchilada sauce, be sure to taste it before adding extra cayenne as it may become too spicy.
Lay out a large flour tortilla. Spread a generous amount of the ground beef mixture followed by lettuce, and cheese.
Roll the tortilla up, tucking in the sides as you go. Place the rolled burrito in a baking dish. Repeat with the remaining tortillas.
Pour the enchilada sauce over the top of the burritos. Sprinkle with the remaining cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve hot, topped with sour cream, guacamole, salsa, and a sprinkle of fresh cilantro.
